Dry red wine Antinori Chianti Classico Peppoli - intriguing with a spicy, soft taste with a silky texture, fruity hints and smooth tannins in a long aftertaste. The multifaceted, generous aroma of the wine is filled with tones of red currant, cherry, violet, smoke and oak. The wine goes well with red meat dishes, grilled beef, lamb in wine sauce, as well as pasta, Italian pizza and paella. For light snacks, pepperoni pizza and gorgonzola cheese are best.
Harvesting began in the second half of September with Merlot and Syrah, and ended with Sangiovese. Each variety was vinified separately. Sangiovese was crushed and fermented with the skins in stainless steel tanks for 10 days. For Merlot and Syrah, maceration became preferable in the first stage, the purpose of which is to preserve fruity notes and soft tannins. Then fermentation was carried out at a maximum temperature of 26-28 ° C. After the malolactic fermentation of all varieties was completed before the beginning of winter, the wine was assembled and placed in barrels (90% from Slavonian oak, 10% from American) for aging for the next 9 months. Already aged wine "Peppoli", 2015 was bottled in November 2016. Since 2013, some of the wine is fermented and matured directly in the new cellars of the Antinori Chianti Classico winery.
